Wash and quarter apples, bring them to a boil with a little water and lemon peel and cook for a few minutes only until tender. Pass the apples through a sieve, add sugar and pinch cinnamon.
This sauce goes well with boiled beef or as a sweet dish with vanilla icecream and whipped cream.
